To celebrate, I flipped a childhood favorite into something a bit unexpected: a grilled cheese stuffed with creamy tomato soup flavor. It’s nostalgic comfort food with a quick, modern twist.

In high school I lived on PB&J or grilled cheese as after-school snacks. These days my appetite has settled, but I still love a half sandwich to tide me over until dinner. Some foods are meant to be indulgent, and a proper grilled cheese is one of them — soft white or sourdough bread and real melting cheese make all the difference.

I tend not to favor many whole-grain breads, so when I want something special I’ll reach for sourdough or a crusty baguette. For this sandwich I used sourdough and high-quality cheese — no margarine or cheese product tubs here. I went with Real California Cheese for a rich, authentic flavor.

Grilled Cheese & Tomato Soup Sandwich

Ingredients
- 2 slices sourdough bread
- 2 slices (about 2 ounces) Real California sharp cheddar cheese
- 2 tablespoons tomato paste
- Salt and pepper, to taste
Instructions
- Heat a skillet over low heat and lightly coat it with cooking spray or a small amount of butter.
- Spread the tomato paste evenly on one slice of bread. Season with salt and pepper to taste.
- Layer the cheddar cheese on top of the tomato paste and place the second slice of bread over the cheese.
- Place the sandwich in the skillet and cook for 1–2 minutes, or until the bottom is golden brown.
- Flip the sandwich and cook an additional 1–2 minutes, until the cheese is melted and the bread is nicely browned.
- Remove from the skillet, slice if desired, and serve immediately.
