Texas Sheet Cake Cookies

These Texas sheet cake cookies offer a soft, chocolatey center covered in a glossy fudge icing — everything you love about the classic sheet cake, but in a handheld cookie. They’re perfect for holidays, bake sales, or as a gift.

Although I didn’t grow up in Texas, I learned to appreciate its rich food traditions during college. Classic Texas favorites like barbecue, chicken fried steak and pecan pie are made from simple, hearty ingredients and have endured because they’re so satisfying and delicious.

Texas sheet cake is one of my favorites: simple ingredients, intense chocolate flavor, and usually topped with pecans. These cookies capture that same flavor profile in a portable treat. The cookies are made from a boxed chocolate cake mix for ease, while the icing is made from scratch so the flavor truly shines.

The cookies bake up soft and slightly chewy, and the warm fudge icing is poured over them and topped with a pecan half. The pecan adds that classic Texas touch — though you can skip nuts if you prefer.

What is Texas Sheet Cake?

Texas Sheet Cake is a beloved Southern dessert with many family variations, but most versions share a few key elements:

  • Large, flat chocolate cake (a sheet cake)
  • Generous, rich chocolate icing
  • Pecans sprinkled or placed on top

These cookies are a faithful, smaller-scale take on that classic combination of chocolate and nuts.

Ingredients

  • 1 box chocolate cake mix (any favorite brand)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil

  • 2 tablespoons cocoa powder
  • 3 tablespoons whole milk
  • 2 cups powdered sugar
  • Pecan halves (one per cookie, optional)

Texas Sheet Cake Cookies can be made with or without nuts. Both versions are delicious.

Instructions: How to Make Texas Sheet Cake Cookies

Makes about 18–24 cookies depending on dough size. Using a generous 1 tablespoon scoop yields roughly 19 cookies.

To Make the Chocolate Cookies:

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, stir together the cake mix, eggs and oil until smooth. No mixer required.
  3. Scoop dough into 1 tablespoon portions and place on the prepared sheets about 2 inches apart.
  4. Bake 8–10 minutes, until slightly soft in the center. Transfer cookies to a wire rack to cool for a few minutes.

Chocolate Frosting Instructions:

  1. In a medium saucepan over medium heat, combine butter, cocoa powder and whole milk. Whisk until smooth and warmed through.
  2. Remove from heat and whisk in the powdered sugar gradually until fully incorporated and glossy.
  3. Place a baking sheet under the cooling rack to catch drips. Spoon or pour the warm icing over each cookie to coat.
  4. While icing is still wet, press a pecan half into the center of each cookie. Let the icing set before serving or storing.

Prep Tips

  • Icing: Keep the frosting warm and pour it over all cookies while it’s still pourable — it thickens and hardens as it cools and can’t be reworked once set.
  • Nuts: Pecan halves are traditional, but you can use chopped pecans or omit nuts entirely for a nut-free version.
  • Cake mix: Any chocolate or milk-chocolate cake mix works. This recipe intentionally omits water to produce thicker, chewier cookies.
  • Variations: Try switching up the cake mix or topping for different flavor combinations.
