Start by rolling out one sheet of puff pastry and cutting it in half across the middle.

Pre-rolled pastry being prepared ready for the pesto filling.

Spread green pesto across the top half and red pesto across the bottom half of that sheet.

Place the second sheet of pastry on top, aligning it with the first and pressing down so the layers stick together. Use the cut line on the first sheet to guide you and cut the second sheet in the same place if needed.

Pesto spread onto the pastry sheets.

Use a star-shaped cutter to cut out shapes from the layered pastry. A 6cm cutter works well, but choose a size that suits your preference.

Place a sheet of parchment paper on a baking tray. Use a large dinner plate to draw a circle on the paper as a template for your wreath.

A large white plate is being drawn around to make the wreath template.

Arrange the star shapes around the drawn circle, slightly overlapping each star to form a wreath. Once you’re happy with the placement, brush the tops with egg wash for a glossy finish.

Sprinkle grated Parmesan evenly over the stars before baking.

Bake at 200°C fan for about 15 minutes, or until the pastry is puffed and golden brown. Remove from the oven and let it cool slightly before serving.

Recipe FAQ’s

Egg Alternative – If you prefer not to use an egg, brush the pastry with milk for a light golden finish.

Offcuts – Save the pastry offcuts. Bake them on a separate tray for delicious little extras.

Serving – The wreath can be served directly on the parchment paper it was baked on or transferred to a board or large plate. Some stars may shift when moving it, but they can be easily rearranged into the wreath shape.
