Proof Dough Quickly in an Instant Pot: A Step-by-Step Guide

Learning to proof dough in the Instant Pot was a game-changer for homemade bread making!

There’s nothing like the warm aroma of fresh bread baking. For years I used a bread machine for mixing, kneading, and rising, but when I needed larger batches for holiday dinner rolls I discovered a simple alternative: proofing dough in the Instant Pot.

Proofing dough in the Instant Pot creates a reliably warm, draft-free environment that helps yeast do its job. I use this method for dinner rolls, pizza dough, naan, soft pretzels, and even no-knead breads. In many recipes the dough completes its first rise in the Instant Pot, then is shaped, allowed a shorter second rise in pans, and finally baked in the oven for a perfect finish.

I also experimented with baking certain quick bread styles inside the Instant Pot. While not every recipe works for pressure-cooker baking, some no-knead and English muffin–style loaves come out very well when proofed and cooked in the pot. For many everyday recipes, though, I proof in the Instant Pot and finish baking in a conventional oven.

How to Use the Instant Pot to Rise Dough

1. Mix and knead your dough according to your recipe. You can do this by hand or with a stand mixer.

2. Lightly grease the Instant Pot insert with cooking spray, a little oil, or the wrapper from a stick of butter. This prevents sticking and makes removing the dough easier.

3. Place the shaped ball of dough in the greased insert and gently roll it so it gets a light coating of oil.

4. Cover the pot with the Instant Pot lid. A glass lid also works and lets you watch the dough rise without lifting the lid.

5. Use the Yogurt setting on the Instant Pot (the “normal” level works well) to create a gentle, warm environment. The Yogurt function maintains a temperature that encourages yeast activity without getting hot enough to harm the yeast.

6. Let the dough rise until it has roughly doubled in size. Most doughs will double in about 30–60 minutes in the Instant Pot, though warmer environments can shorten that time, so start checking early.

When the first rise is complete, press Cancel to turn off the Yogurt function and remove the dough for shaping.

What to Do After the First Rise

After the dough has doubled, follow your recipe for shaping and the second rise. Typically you shape the dough, place it in or on the baking pan, and allow a shorter second rise—often around 20 minutes—before baking. This sequence applies to dinner rolls, french bread, focaccia, ciabatta, and most yeast breads.

For dinner rolls, remove the dough from the pot, divide and shape into rolls, arrange them in the baking pan, let them rise a second time, then bake until golden and tender.

Is Proofing Dough in the Instant Pot Possible Without a Yogurt Button?

Some Instant Pot models lack a Yogurt button. In those cases you can still proof dough, but it’s a bit less straightforward. The other settings are usually too hot for yeast, and even the Keep Warm function may overheat the dough if left on continuously.

One workable approach is to run Keep Warm for a couple of minutes to gently warm the insert, then press Cancel. Place the dough in the warmed pot and close the lid so residual heat helps the dough rise. For smaller amounts of dough, set the dough in a dish on the trivet so it’s not in direct contact with the insert; this reduces the chance of overheating. This method is less consistent than using Yogurt but can be effective if monitored carefully.

Instructions

  1. Mix and knead dough according to recipe instructions.
  2. Lightly oil the Instant Pot insert, transfer the ball of dough, and roll it to coat with oil.
  3. Place the lid on the Instant Pot and select the Yogurt button at “normal” level.
  4. Allow dough to double in size, generally 30–60 minutes.
  5. After the first rise, remove dough, shape it, perform a second rise (about 20 minutes), and bake according to your recipe.

Notes

  • If your Instant Pot lacks a Yogurt setting, warm the pot briefly using Keep Warm, then turn it off and place the dough inside to rise from residual heat. This is less consistent but can work if monitored.
  • Check dough earlier than the recipe suggests because the Instant Pot’s warm environment can speed up rising times.
