I picked up an elegant box of melt-in-your-mouth chocolates during a visit to one of Austin’s favorites, Central Market. I planned to include them in a wine-tasting evening and couldn’t resist splurging on one element of the tasting.
Unexpectedly, half the box remained — and those leftover pieces transformed into a delectably rich mousse.

Easy Chocolate Mousse

Ingredients
- 4 large egg yolks
- 1/4 cup granulated sugar
- 1/8 teaspoon table salt
- 2 tablespoons unsweetened cocoa powder, recommended: Valrhona
- 2 ounces semisweet dark chocolate
- 3/4 cups heavy cream
Instructions

Finely chop the chocolate and set it aside. In a double boiler, whisk the egg yolks, sugar, and salt until the sugar dissolves and the mixture is warm to the touch, about 2 to 3 minutes. Remove from heat and quickly whisk in the chopped chocolate until melted, then add the cocoa powder and whisk until smooth; the mixture will thicken. Transfer to a medium bowl and cool to room temperature.

In a separate medium bowl, whip the heavy cream to soft peaks. Fold half of the whipped cream into the cooled chocolate mixture by whisking to lighten it, then gently fold in the remaining whipped cream with a rubber spatula until combined. Divide the mousse among four small serving dishes, cover, and chill for at least 2 hours or up to 1 day.

Take the mousse out of the refrigerator about 15 minutes before serving. Top with additional homemade whipped cream and shaved chocolate for garnish.
