Now that we finally have a grill, we’ve been grilling everything—meats, vegetables, and even fruit (grilled peaches are amazing). Grilling brings out deeper flavors and great texture, so my husband and I can’t get enough. I combined two of my favorites to create a delicious bunless burger, and I’m thrilled with the results.

Guacamole Stuffed Burgers Recipe

A low-carb burger is my go-to when I need something quick and satisfying. Pairing a juicy burger with tangy, creamy guacamole is a match made in heaven. These guacamole stuffed burgers let you taste guacamole with every bite while staying Whole30 compliant and keto-friendly.

One of the best parts of this recipe is that the patties don’t need to be perfect. A little guacamole may seep out while cooking, and that only makes the finished burgers look more tempting. They almost shout “flavor” even before the first bite.

Easy Bunless Burger Recipe

I’ve embraced bunless burgers for years. The meat and toppings are the stars, and wrapping a burger in lettuce adds an extra serving of greens, which I love. If you’re aiming for low carb, skipping the bun is an easy win.

My favorite way to keep everything together is using tender, flexible leaves like butter lettuce to wrap the burger. For extra tidiness, fold a piece of parchment or wax paper over one half of the wrapped burger—In-N-Out style—to keep it neat. You can also simply eat these with a fork or place a patty on top of a salad for another delicious option.

How to Make Guacamole Stuffed Burgers

These burgers don’t need to be perfect—some guacamole may escape, and that’s fine. Below is the easiest method I use to assemble them:

  1. Create the burger mixture and the guacamole separately.
  2. Divide the ground meat into 4 equal portions.
  3. Split each portion in half and flatten each half into a circle roughly the size of a burger patty.
  4. Place a spoonful of guacamole in the center of one circle.
  5. Top with the matching circle and carefully seal the edges with your fingers.
  6. Shape into a patty and repeat for the remaining portions.

You may have some guacamole left depending on how generous you are with the filling; use any extra as a topping after cooking. The result is a crowd-pleasing low-carb burger that’s both healthy and indulgent.

We loved these at home—my husband ate two in one sitting. They make a fantastic summer grilling recipe for family and friends. If you don’t have a grill, a grill pan or a cast-iron skillet on the stovetop works well too.

Ingredients

Burger Patties

  • 1 lb ground beef, preferably grass fed
  • 1 tsp cumin, omit for AIP
  • 3/4 tsp sea salt
  • 2 garlic cloves, minced

Guacamole

  • 1 medium avocado, ripe
  • 2 tbsp lime juice
  • 1/4 tsp sea salt
  • 2 tbsp chopped cilantro

Optional toppings

  • Sliced onions
  • Pickles
  • Sliced tomatoes
  • Paleo mayonnaise
  • Lettuce, for wrapping

Instructions

  • In a large bowl, combine all ingredients for the burger patties and mix gently—avoid over-mixing.
  • In a separate bowl, mash the guacamole ingredients together until smooth.
  • Divide the burger mixture into 4 equal portions.
  • Split each portion in half and flatten each half into circles. Place a scoop of guacamole in the center of one circle, top with the other, and pinch the edges together to seal. It’s okay if a little guacamole seeps out.
  • Repeat until you have four filled patties. Any leftover guacamole can be served on top after cooking.
  • Preheat and grease your grill or grill pan over medium-high heat.
  • Cook the patties about 4 minutes per side, or until cooked through to your liking.
  • Serve with your favorite toppings and enjoy.
