The Best Quick & Easy Zucchini Fritters
There’s something incredibly satisfying about shredded vegetables and cheese turned into crispy, golden pancakes. Zucchini fritters are simple, tasty, and a great way to use extra produce from the garden or leftovers from the fridge. They’re also perfect as a light meal, a side dish, or a healthy snack.
To make these delicious low-carb fritters you only need to remove excess moisture from the zucchini, then combine it with egg, cheese, almond flour, and seasonings. Fry the patties in a little olive oil until crispy and golden and you’ll have a quick, healthy treat ready in minutes.

- 2 medium zucchini (about 4 cups shredded)
- 2 eggs
- 1/2 cup grated or shredded Parmesan
- 2 heaping tbsp almond flour
- 1/2 tsp garlic salt
- 1/4 tsp black pepper
- 2 tbsp olive oil

Instructions
Follow these simple steps to make crisp, flavorful low-carb zucchini fritters using just a few pantry staples.

Step 1Grate the zucchini and remove excess moisture. Use a cheesecloth or a clean dish towel to squeeze out liquid. Alternatively, place shredded zucchini in a fine-mesh strainer over a bowl for about 10 minutes and press down with paper towels to extract more water. Removing moisture is key for crispy edges and firmer fritters.

Step 2In a medium bowl, combine the drained zucchini with the eggs, Parmesan, almond flour, garlic salt, and black pepper. Stir until the mixture holds together. For a different flavor, try adding a pinch of onion powder, smoked paprika, or a little cayenne.
Step 3Heat 2 tablespoons of olive oil in a frying pan over medium-high heat. Scoop about 1/4 cup of the mixture per fritter into the hot oil, then press gently with the back of a spoon to flatten into a pancake shape. Cook 2–3 minutes per side, or until each side is golden and crisp.

Step 4Transfer cooked fritters to a paper-towel-lined plate to drain briefly, then serve warm with sour cream, ranch, or your favorite dipping sauce. These fritters are packed with protein and fiber and work well as a snack, side, or light vegetarian meal.
