How To Make Peanut Butter Pie

Begin the cookie crust by creaming the butter and sugars until light and fluffy.

Add the egg and vanilla, mixing until combined.

Stir in the dry ingredients—flour, pudding mix, baking soda and salt—until the dough comes together.

Add M&M’s to the dough. I used classic milk chocolate candies for the crust.

Fold the M&M’s in gently so they stay intact.

Press the cookie dough into a lightly greased pie plate.

Press the dough evenly up the sides and bottom. Bake about 35–40 minutes until fully set, then let the crust cool completely.

For the filling, beat softened cream cheese, peanut butter, sugar and buttermilk until smooth and creamy.

Pour the filling into the cooled cookie crust and spread evenly.

Decorate the edges with additional M&M’s and finish the center with chocolate curls for a polished look.

Ingredients
- 1 stick unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1 1/4 cups all purpose flour
- 3 tablespoons instant vanilla pudding mix
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 1/4 cups Milk Chocolate M&M’s
Peanut Butter Pie Filling
- 1/2 cup creamy peanut butter
- 8 ounces cream cheese softened
- 1/2 cup granulated sugar
- 1/4 cup buttermilk

Preheat oven to 350 degrees F and lightly spray a pie dish with cooking spray.

Cream the butter and sugars in a large mixing bowl. Stir in the egg and vanilla. Slowly add the flour, pudding mix, baking soda and salt, mixing until combined. Fold in the M&M’s. Transfer the dough to the pie dish and press it up the sides and across the bottom. Bake 40–45 minutes until the crust is set. As soon as you remove it from the oven, press the center gently with a spoon to create a slight well. Let the crust cool completely.

To prepare the peanut butter filling, beat together the peanut butter, sugar, cream cheese and buttermilk until smooth. Place the filling into the cooled cookie crust and spread evenly. If desired, whip cream and sugar to stiff peaks and top the pie, then sprinkle additional M&M’s over the surface. Refrigerate for at least 2 hours before serving.
