Smoked Haddock & Mash (Bubble&Smoke)
Ingredients
- 2 pieces Smoked haddock fillets
- Drizzle of olive oil
- Knob of butter
- Salt & black pepper
- Few sprigs of dill
- 500-750 g Potatoes, peeled and chopped
- 3 Leeks, trimmed and sliced
- Drop of milk
- Handful of spinach
- 2 Eggs, for poaching
Instructions
- Preheat the oven to 200°C / 400°F / Gas 6.
- Put the potatoes on to boil. Once boiling, reduce the heat and simmer for 15–20 minutes until tender.
- In a frying pan, heat a little oil and gently pan-fry the leeks for about 10 minutes until soft.
- Place the smoked haddock in a baking dish, drizzle with olive oil, add a knob of butter and a few sprigs of dill, season, then bake for about 15 minutes.
- Drain the potatoes, mash with butter and a splash of milk until smooth. Stir in the cooked leeks and season to taste.
- When almost ready to serve, bring a small pan of water to a gentle simmer. Crack the eggs into the water and poach for 2–3 minutes depending on how runny you like the yolk.
- Reheat the mash gently if needed and stir in the spinach at the last minute so it wilts slightly.
- On warm plates, pile the mash, place the baked smoked haddock on top and spoon over a little of the fish cooking juices. Top each portion with a poached egg and garnish with dill.
- Serve with peas or your choice of vegetables.
