Homemade Honey Lollipops: A Sugar-Free Recipe You’ll Love

I’ve recently been experimenting with hard candies and quickly became hooked. My first attempt used only honey and produced lollipops with a richer, darker honey flavor and color—delicious, but distinct. The second version added some granulated sugar alongside honey, creating a lighter taste and texture closer to traditional lollipops. That one quickly became our favorite.

Because the pure-honey version is the healthier option, I’m including both recipes here. Each has its own flavor and appearance, but both are simple, tasty, and healthier than most store-bought lollipops.

These lollipops are a great introduction to homemade candy. They only need one or two main ingredients, take under an hour from start to finish, and are easy to customize with food-grade essential oils or different molds and shapes.

How To Make Homemade Honey Lollipops With or Without Sugar:

Ingredients

  • honey – Use raw honey when possible. It has antibacterial and anti-inflammatory properties that can soothe a sore throat and reduce inflammation.
  • granulated sugar – Optional: adding white granulated sugar produces a lighter color and a more familiar lollipop taste.
  • lemon essential oil (optional) – Food-grade lemon essential oil can help break up mucus and add a bright flavor. Only use essential oils labeled food-safe.

Supplies

  • lollipop molds – Any lollipop mold will work; choose one the size you prefer.
  • lollipop sticks – If your molds don’t include sticks, be sure to have some on hand.
  • parchment paper or wrappers – Use parchment to wrap finished lollipops so they don’t stick together.
  • candy thermometer – Essential for reaching the correct temperature for hard candy without scorching the honey or sugar.

Can You Heat Honey For Candy Making?

Heating honey for hard candy does reduce some of its health benefits. Certain varieties, such as Manuka honey, retain more of their antibacterial and anti-inflammatory qualities under heat, but most honeys will darken and develop a stronger, deeper flavor when cooked to the hard-crack stage. Even so, using honey in place of syrups or only refined sugar is still a healthier option for homemade candy.

How Do I Keep Homemade Honey Lollipops From Getting Sticky?

Store lollipops in the refrigerator inside a mason jar to prevent sticking. If you prefer room-temperature storage, wrap each lollipop in a small square of parchment paper, twisting it around the stick to keep them separate.

Are Essential Oils Safe To Eat?

Only use essential oils specifically labeled as food-safe when adding them to candy or drinks. Follow the manufacturer’s guidelines and add oils sparingly—just a few drops are enough to impart flavor.

How To Make Homemade Honey Lollipops Without Sugar:

WARNING – You will be working with very hot ingredients. Take care to avoid burns.

Prep – Place lollipop molds on a flat surface and insert sticks. Lay parchment paper beneath molds to catch drips and make cleanup easier.

Heat – In a small saucepan, warm 1 cup honey over medium heat. Use a candy thermometer and stir frequently until the mixture reaches 300°F (the hard-crack stage). Immediately remove from heat and let the bubbling subside for a minute.

Stir – Carefully add 25 drops of food-grade lemon essential oil, if using, and stir gently to combine.

Pour – Working quickly and carefully, spoon the hot honey into the molds. Ensure each stick is properly coated and centered.

Let Set – Allow the lollipops to harden for 30–60 minutes, then pop them out of the molds and enjoy.

How To Make Homemade Honey Lollipops With Sugar:

Prep – Prepare molds and sticks as described above and place parchment underneath for easy cleanup.

Heat – Combine 1 cup granulated sugar, 1/3 cup honey, and 2 tablespoons water in a small saucepan. Heat over medium, stirring frequently, and monitor with a candy thermometer. When the mixture reaches 300°F, remove from heat and let the bubbling calm.

Stir – Stir in a few drops (about 25) of food-grade lemon essential oil if desired.

Pour – Carefully spoon the hot mixture into molds, making sure each stick is coated and positioned properly.

Let Set – Allow 30–60 minutes for the lollipops to harden, then remove from molds and serve.

Tips:

For Best Results – Let the honey cool slightly before adding essential oil so the flavor remains potent.

Store – Refrigerate lollipops in a mason jar to prevent stickiness, or wrap each one in a small square of parchment paper.

Substitutions – Swap lemon essential oil for food-grade orange oil to change the flavor profile.

Honey Lollipops With Sugar

  • 1 cup granulated sugar
  • 1/3 cup honey
  • 2 Tablespoons water
  • 25 drops food safe lemon essential oil (optional)

Instructions

  1. WARNING – Making hard candy involves extremely hot ingredients. Be careful to avoid burns.
  2. Prep – Arrange lollipop molds and insert sticks. Place parchment paper beneath molds for easy cleanup.
  3. Heat (without sugar) – Heat 1 cup honey in a small saucepan over medium heat. Stir frequently and use a candy thermometer. Remove from heat at 300°F and allow bubbles to settle.
  4. Heat (with sugar) – Combine sugar, 1/3 cup honey, and 2 Tbsp water in a saucepan. Heat over medium, stirring, and remove at 300°F. Let bubbling subside.
  5. Stir – Add food-grade lemon essential oil if using and stir gently once the mixture has cooled slightly.
  6. Pour – Carefully spoon the hot mixture into molds, coating each stick and filling molds evenly.
  7. Let Set – Allow lollipops to harden for 30–60 minutes, then remove from molds and enjoy.

Note: For the sugar version, follow the same steps, adding sugar and water during the heating step.

Notes

For Best Results – Let the candy cool slightly before adding essential oil so the scent and flavor remain strong.

Store – Keep lollipops in the fridge in a mason jar or wrapped individually in parchment to avoid stickiness.

Substitutions – Try food-grade orange essential oil instead of lemon for a different citrus flavor.
