I’m a Florida girl at heart — the beach is my happy place, sequined leopard print feels like a neutral, and I adore seafood. The eggplant and sweet gypsy pepper did okay, and I have a cantaloupe ripening on the vine I’m watching closely. Ingredients

  • 1.5 pound salmon filet, skin on (up to 2 pounds is fine)
  • 1 tablespoon olive oil
  • 1 fresh lemon, sliced, plus extra for garnish
  • 2 tablespoons chopped fresh parsley, plus extra for garnish
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat your grill to medium-high (gas or charcoal) or preheat your oven to 400°F.
  2. In a small bowl, combine the parsley, smoked paprika, minced garlic, salt, and pepper.
  3. Pat the salmon dry and place it skin-side down on a large sheet of aluminum foil.
  4. Brush the salmon with olive oil, then rub the spice mixture evenly over the top. Arrange lemon slices on the fish.
  5. Fold the long sides of the foil up to form a tunnel around the fish and crimp the top, then crimp the short ends to seal. Place the sealed packet directly on the grill or on a sheet pan in the oven. Cook 12–16 minutes, until the salmon flakes easily with a fork.
  6. Carefully open the foil, garnish with additional lemon wedges and parsley if desired, and serve immediately.
