Keto Oven-Braised Brisket: Slow-Cooked Tender Brisket Recipe

A long, slow-cooked oven brisket is one of my favorite “set it and forget it” holiday mains. Using a sugar-free BBQ sauce and a dry rub keeps this classic, melt-in-your-mouth beef dish compatible with a keto plan. Pair it with make-ahead low-carb sides and you have a stress-free feast.

There’s something magical about a properly cooked beef brisket — it even brings my grown sons home right away.

I’ve cooked brisket in pressure cookers and slow cookers, but slow baking in the oven gives my preferred texture and flavor every time.

My mom didn’t own a slow cooker, but she was a master of slow oven roasting. She’d get up before dawn to start roasts and turkeys, and the results were always amazing.

I follow her lead with my oven-baked brisket. Below I explain the simple approach I use so you can make a memorable holiday main. The recipe card further down lists exact times and ingredients.

Why Cook Brisket Low and Slow?

It’s tempting to speed things up by raising the oven temperature, but don’t. Brisket is a heavily worked muscle packed with connective tissue. Cooking it slowly at low heat allows those tissues to break down and melt into the meat, producing a tender, fork-tender result that almost falls apart.

My Method for Slow-Baked Oven Brisket

  • Plan ahead so the brisket is fully thawed the day before you cook. Large pieces may need two days out of the freezer.
  • Use a dry spice rub you enjoy. You’ll typically need about 1/2 cup of rub for a whole brisket, depending on size. I often make my own sugar-free mix — it’s economical and keeps carbs down. For a personal touch, I sometimes add 2 tsp cumin to the rub. Alternatively, a generous seasoning of salt, pepper, garlic powder, celery salt and paprika works great.
  • The day before serving, coat the brisket thoroughly with the rub, place it in a roasting pan and refrigerate overnight.
  • Time your bake by working backward from serving. As a rule of thumb, allow roughly one hour per pound at 250°F. For example, a 7 lb brisket needs about 7 hours in the oven. I like to remove the pan from the fridge an hour before cooking so the meat loses some chill before it goes in.
  • If you need to prepare ahead, you can fully cook and then freeze the brisket. Cool it, cover tightly with foil, and freeze. Defrost in the refrigerator the day before serving and finish with the sauce and final bake as directed below.
  • For the finishing glaze use a sugar-free BBQ sauce. I often use a bottled sugar-free mesquite or hickory-flavored sauce, but you can make your own. Spoon or pour the sauce over the brisket during the final 30 minutes of cooking so it becomes bubbly and begins to caramelize.
  • For a carnivore-style preparation, simply rub with salt and pepper only. Cover and bake for the required time and skip the BBQ sauce — the meat will still be excellent.
  • When the brisket is done, let it rest briefly, then slice thinly against the grain for the best tenderness.

Nothing gets my family to the table faster than the smell of brisket. This slow-cooked oven brisket reliably yields tender, flavorful slices and is surprisingly easy to execute.

Ingredients

  • 7 lb whole brisket
  • 1/2 cup dry rub seasoning
  • 1 bottle sugar-free BBQ sauce

Instructions

  1. The day before cooking and serving, pat the entire brisket with the dry rub.
  2. Place the brisket fat side up in a foil roasting pan and wrap the pan with foil.
  3. The next day, remove the pan from the fridge and let it sit at room temperature for about an hour. Preheat the oven to 250°F (about 120°C).
  4. Bake at 250°F for roughly one hour per pound (a 7 lb brisket needs about 7 hours). Adjust time for different weights — a 5 lb needs about 5 hours, a 10 lb about 10 hours.
  5. Remove the pan from the oven and drain excess fat, leaving some juices if desired. Increase oven temperature to 350°F (about 175°C).
  6. Pour sugar-free BBQ sauce over the brisket and return to the oven, uncovered, for about 30 minutes or until the sauce is bubbly and the top begins to caramelize.
  7. Remove from oven, transfer to a cutting board, and slice thinly against the grain before serving.

Notes

  • I recommend using a foil roasting pan for easier cleanup.
  • To freeze after cooking: once the brisket has finished the long bake but before adding BBQ sauce, cool the pan, refrigerate overnight, skim off the solid fat layer, keep the remaining juices, cover tightly and freeze. When ready to serve, thaw in the fridge, add sauce and bake at 350°F until heated through and bubbly (about an hour).
