Vegan Avocado Chocolate Mousse

Ingredients
- 2 ripe avocados
- 2 tbsp unsweetened cacao powder
- 120 ml (1/2 cup) almond milk or any plant-based milk
- 200 gr (7 oz) dairy-free dark cooking chocolate (preferably 70% cacao)
- 3 tbsp maple syrup (or agave / rice malt syrup)
- 1/2 tsp sea salt (optional)
Instructions
- Place the dark chocolate in a heat-proof bowl and melt carefully in the microwave in short bursts, stirring between each interval. Set aside to cool slightly.
- Combine avocado flesh, cacao powder, almond milk, maple syrup and sea salt in a food processor or blender. Blend until completely smooth.
- Add the melted dark chocolate and pulse briefly to combine. Transfer to an airtight container and refrigerate for up to 4 days.
- Optional: to serve, sprinkle a pinch of sea salt, shredded coconut and/or cacao nibs on top.
Notes
- To melt chocolate in the microwave without burning it, chop the chocolate finely and heat in 30-second increments, stirring each time. Remove while a few small pieces remain and stir until smooth with residual heat.
