Hello, September! It’s strange to see you arrive so quickly—where did June, July, and August disappear to? The month is already warm here: sunny, humid, and around 88°. I love the heat, so I’m welcoming it. One of the best things September brings is fresh figs. They’re irresistible, especially layered into a fig parfait.

To celebrate this delicious fruit, I’m naming figs the Ingredient of the Month on Sweet Potato Soul. I have several fig-forward recipes planned, but for now let’s start with a simple breakfast: a vegan fig parfait layered with coconut vanilla yogurt, fig-pumpkin granola, and ripe Mission figs.

This parfait is fast, easy, and perfect for a quick vegan breakfast—assembly takes only a couple of minutes. Figs add fiber and potassium, and coconut yogurt contributes beneficial probiotics and healthy fat. Using a flavorful granola, like Purely Elizabeth’s fig pumpkin granola, brings everything together, but any good granola will work.
