Ingredients

  • 1 stick unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 cups all purpose flour
  • 3 tablespoons instant vanilla pudding mix
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups Milk Chocolate M&M’s

Peanut Butter Pie Filling

  • 1/2 cup creamy peanut butter
  • 8 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1/4 cup buttermilk

Instructions

  • Preheat oven to 350 degrees F and lightly spray a pie dish with cooking spray.
  • Cream the butter and sugars in a large mixing bowl. Stir in the egg and vanilla. Slowly add the flour, pudding mix, baking soda and salt, mixing until combined. Fold in the M&M’s. Transfer the dough to the pie dish and press it up the sides and across the bottom. Bake 40–45 minutes until the crust is set. As soon as you remove it from the oven, press the center gently with a spoon to create a slight well. Let the crust cool completely.
  • To prepare the peanut butter filling, beat together the peanut butter, sugar, cream cheese and buttermilk until smooth. Place the filling into the cooled cookie crust and spread evenly. If desired, whip cream and sugar to stiff peaks and top the pie, then sprinkle additional M&M’s over the surface. Refrigerate for at least 2 hours before serving.

Notes

Refrigerate the pie for 2 hours before serving to let the filling set.
