
This Spicy Vegan Salad Dressing is so good, you’ll want to put it on everything! Also perfect as a dip for fries or veggie nuggets!
Summer is here, and with it comes bright produce, cool meals, and lots of salads. On a recent trip to Florida I discovered that some people avoid salads because they find them bland. The trick is a hearty base and a bold dressing—additions like beans, pasta, or tofu make a salad filling, but the dressing is what really ties everything together.
This spicy vegan salad dressing grew out of an early recipe I made for cabbage tacos. The mix of garlic, smoky chipotle, and tangy lemon is a delicious combo that lifts simple greens into something exciting. It also doubles as a dip for raw vegetables, fries, or baked nuggets—versatile and flavorful.

Spicy Vegan Salad Dressing
Ingredients
- 1/2 Cup Cashews soaked overnight
- 3/4 Cup Unsweetened Almond Milk
- 1 Clove Garlic
- 1 Chipotle Pepper in Adobo sauce
- 1 Tbs Adobo Sauce
- 1/4 Tsp Salt or more to taste
- 1/4 Tsp Black Pepper
- Juice from 1/4 Lemon
- 2 Tbs Extra Virgin Olive Oil
Instructions

If you weren’t able to soak your cashews overnight, start by boiling them for 10 minutes until soft.

Add all ingredients to a high-speed blender and blend on high until the mixture is smooth and creamy.

Taste and adjust seasoning. Add more salt or adobo sauce if you prefer it saltier or spicier.

Serve with salad bowls, veggie nuggets, fries, or drizzle over grilled corn for a delicious finish.

Notes
- Canned chipotle peppers in adobo sauce are commonly found near salsas and Latin food products in most grocery stores.
- To make a cheese-like version ideal for chili cheese fries, add 1/4 cup nutritional yeast and a pinch of cumin.
- This dressing will keep in the refrigerator for about 4–5 days.
